yolked up.



hello world. one of my all time favorite things has always been soft boiled eggs on toast. for those of you who don't know what that is, it is essentially a hard boiled egg with a runny yolk. summed up, it is delectable, delicious, and one of my favorite things my dad used to make me. as much as i like egg whites, i love a runny yolk. this is a super easy and filling breakfast, lunch, dinner, or snack & once you know how to make it yourself, i promise it will become a staple within your household. 

(makes 1 serving) 
- 1 egg  
- 1 piece of orowheat light 100% whole wheat bread
- 2 campari tomatoes (optional)

 
 to start, you'll need a small pot. fill it with water that will fully cover an egg if it were to be put inside the pot. begin to boil the water. while the water is starting to boil, i begin collecting my ingredients. once the water has reached a boil, i slowly drop my egg in with a spoon and immediately set a timer for 5 minutes. while the egg is boiling, i toast my piece of bread and cut my tomatoes. 


 

when i was younger, i would eat this with simply an egg and bread, but it is delicious with tomatoes, avocado, onions, zucchini, lettuce, or whatever other topping you like. once the timer goes off, quickly bring your egg under cold water to stop the cooking process. crack the egg as you would a hard boiled egg. top your toast with tomatoes (or any other delcious topping/ veggie you prefer). then crack your egg over it and let the yolk evenly distribute over the tomatoes, then chop the egg white and put on top. lightly season with pepper & salt for taste.
