these crazy two ingredient pancakes have been all over pinterest & every other blog i follow. so about a month ago i decided that it was time for me to give it a test run. these are a little different than normal pancakes (OBVS!) so it took time to perfect them. they are not always the prettiest thing, but the flavor is always there! so these 2 ingredient pancakes are simply one ripe banana and 2 egss. since i am an egg white lover, this is what my recipes consists of
- 1 ripe banana.
- 3 egg whites.
- 1 tbsp milled flax.
previously i have added blueberries, strawberries, dark chocolate & other fruit fillers, but my current stock in my fridge doesn't contain any of that deliciousness, so instead i added milled flax. this keeps the mixture thicker & adds some fiber :D. to prepare you initially mash the bananas and then add the egg and flax. thoroughly mix your mixture while you warm up a medium pan on the stove. lightly spray the pan with non stick spray and add your mixture. when i make them, 1 serving makes about 2 pancakes. once poured, sprinkle on any added goodies such as berries or chocolate. cover and let it steam on medium heat. once the edges are browned, it is time to flip! this was a tad difficult at first,
but i promise you will get a hang of it.
tip for efficient & beautiful cooking:
1. use an electric skillet for cooking the pancakes
2. let it fully cook on the other side or you'll have to flip it back and forth
once your pancakes are done and on your plate you can top them with a number of wonderful things, just as you would any pancakes. almond butter, fresh fruit & sugar free syrup are some of my absolute favorites. now go any try these pancakes, they are delicious & such a healthy alternative to the flour & sugar filled regular ones.
