lunch packed with love.

i have a busy week with school and work this semester. i am a full-time college student, who works on my days off; meaning early mornings, late nights & lack of time for creativity. so unless i plan ahead, i would be spending excess amounts of money on lunches & dinners when i am out of the house. that just does not sit well with my pocketbook & waistline. eating healthy is difficult to maintain & weight loss is extremely difficult to achieve when constantly eating out.


salads are one of the easiest things for me to pack and eat when i am on the go or at work. one of my absolute favorite toppers for salads are fajita style veggies, aka sauteed onions and belps (bell peppers). i don't add oils or butter, just garlic, a dash of pepper & crushed red peppers. steam them a tad and then cook them till they are soft. then i let them cool and put them on top of my chopped romaine, spinach, or mixed greens.









for the days that i am gone for both lunch & dinner, i can't live on just romaine salads. those days i add protein, typically chicken since i love it, & a side of veggies. this week i had mushrooms & zucchini in my fridge so i chopped those up & sauteed them a bit. i added chopped garlic, pepper, & crushed red peppers to the top. since i made a big serving of belps & onions i added some of those as well.



now i am packed & ready for the next 3 days. organization is key when i began eating healthy & trying to lose weight. when i don't plan ahead, i find it easier to make excuses and cheat. lots of tupperware & space to store your prepared meals is key :D.
